I’ve been unofficially observing Meatless Wednesdays for awhile. My motivations are: I want to consumer more vegetables in my diet and this is a perfect way to force myself to be more creative; I want to be more eco-friendly and eliminating one day a week from consuming meat contributes to this goal; and I want to save money (meat can be kind of expensive, especially if I buy organic, which I’d like to do down the line).

So today I thought it might be neat to document my success at maintaining this goal. I’ll try to post weekly how Meatless Wednesday goes. Let me know if you’re doing something similar.

Breakfast

  • Bowl of honey nut cheerios and skim milk
  • Coffee
  • Water

Snack

  • Bowl of maple oatmeal

Lunch

  • Salad with honey balsamic dressing
  • 1/2 bowl of tomato basil soup
  • Piece of cornbread
  • 1 chocolate cookie
  • Seltzer water

Snack

  • Apple

Dinner

  • 1/2 black bean burger
  • Handful of fries
  • 1/3 cup butter corn
  • Pickle slice
  • Seltzer water
  • rose petals
